Dandelion is a great antioxidant that contains large quantities of minerals. Its bitter compounds promote bile flow and digestion.
500g dandelion leaves
150g bacon or the ham of your choice
4 eggs
2tbs cider vinegar or raspberry vinegar
5tbs olive oil
2 shallots
Salt and pepper
Wash the dandelion several times, drain and put in a salad bowl.
Slice the shallots thinly and soften in a pan, add the ham until cooked. Transfer the pan content to the salad bowl. Heat the vinegar in the same pan, then pour on the salad. Add the oil, salt and pepper and mix together. Boil the eggs for 6 minutes, peel them gently, cut them into halves and add delicately to the salad. Serve and enjoy!
